customising the template

Is there a way of customising the template, lets say the blog#0 site definition for example

The short answer is: Yes.
There are many ways to customize an existing template.
The first one that I would look into is using Feature Stappling. You can attach any feature to a site definition that will run when a site based on that site definition is created. If you want to staple that feature to all site definitions you will use the GLOBAL as a site definition target. For more info see: http://msdn.microsoft.com/en-us/library/bb861862.aspx

Te other approach is to create a new custom site definition. I would use this approach for more advanced customizations. You can just copy one of the exising site definitions over and start customizing it as you need it.
